This perfect weekend meal turns cauliflower into deliciously spicy wings and involves some serious finger licking. Let us introduce you to this cauliflower wings with quinoa tabbouleh recipe.
The wings and the tabbouleh both work as a stand-alone dish/treat by themselves but we like to serve them together to make a proper meal. Also, the fresh quinoa salad gives a nice balance to the spicy cauliflower wings.
Ah, the wings… that sticky texture, sweet and spicy taste, slightly crispy crust but soft from the inside. Yum! For us this is the perfect weekend treat just because of the time it takes to prepare the wings. But, in all honesty, I would be happy to have these wings any day of the week.
CAULIFLOWER WINGS WITH QUINOA TABBOULEH

Ingredients
- 1 Cauliflower
- 120g Spelt flour
- A pinch of sea salt
- 1 tsp Smoked paprika
- 1 tsp Cayenne or chili powder
- 2 tsp Garlic granules
- 120ml Almond milk
- 50-100ml Water
- 3 tbsp Tomato puree
- 1 tbsp Tamari sauce
- 1 tbsp Maple syrup
- 1-2 tsp Sriracha
- 200g Quinoa
- A bunch of Fresh coriander
- 1 Shallot
- 2 Tomatoes
- Juice of 1 Lime
- 1 tbsp Olive oil
- 1 Garlic clove
Instructions
- Pre-heat oven to 200 °C
- Cook the quinoa as instructed on pack. Once cooked, put aside to cool
- Rinse and chop the cauliflower head into bite sized, ‘wing like’ pieces
- Prepare batter by mixing the spelt flour with sea salt, smoked paprika, cayenne pepper and 1 tsp garlic granules. Mix in the almond milk so that a smooth batter forms. Add water little by little as required to get a thick, smooth batter but be careful not to make it too runny
- Dip the cauliflower wings into the batter. Shake off excess and place on a baking sheet. Bake in the oven for 20-25 minutes
- In the meantime, prepare sauce by whisking together the tomato puree, tamari sauce, maple syrup, sriracha and 1 tsp garlic granules
- Once the cauliflower has finished baking, remove from the oven and dip or toss in the sauce. Again, shake off excess and then place them back on the baking sheet and bake for another 20-25 minutes, or until browned on the edges and the sauce has caramelized
- In the meantime, finish off the quinoa salad by chopping the shallot (very finely), tomatoes and fresh coriander. Mix in with the quinoa
- Make a dressing for the quinoa salad by finely chopping 1 garlic clove and mixing with olive oil, lime juice and a pinch of salt. Mix the sauce in with the quinoa salad
- Ready to serve! Serve the wings with the quinoa salad
