Channeling my inner Italian mamma here and cooking a simple lemon mascarpone pasta for lunch. One thing I learned about Italian cooking when living in Milan was that food doesn’t have to be complicated to be really good. Especially when it comes to lunch. A simple plate of pasta is all you need, occasionally with a glass of good wine of course.
A word about mom life then.. What the hell happens to time when you spend your days at home with a baby? You feel bored out of your head on a daily basis yet you still don’t have time to do anything. Every day feels the same and by noon you are completely out of ideas of what to do next, time drags but then suddenly it’s weekend again. And the global pandemic doesn’t help. Weird times!
Therefore, I’ve mastered the art of a simple pasta dish with an added twist to add a touch of culinaristic indulgence to my life. Gosh I miss long dinners in nice restaurants with good company! In the absence of that, I’m just adding some extra cream, butter, or in this case mascarpone, even to the simplest pasta to get my daily dose of indulgence. With an occasional glass of wine of course.
So try this dish, when life gets a bit too boring but you still don’t have time to spend in the kitchen. This lemon mascarpone pasta tastes restaurant-like and is the perfect lunch option when you’ve already poured yourself a glass of white wine before planning what to cook 😉

- 400g spaghetti
- 25g butter
- 125g mascarpone
- ½ lemon juice
- salt & black pepper
- parmigiano to serve
- Bring a large pan with water to boil, add some salt and cook the pasta
- In a small pan over medium heat mix together the butter and mascarpone. Bring to gentle simmer and cook for a couple of minutes. Season with lemon juice, salt and black pepper
- Mix the sauce in with the pasta
- Serve with a squeeze of lemon and parmigiano
